Light Cauliflower Tabbouleh

Tabbouleh?! It’s a finely-minced “salad” that can be repurposed as a topping or simple side. This is light and refreshing with notes of tart lemon juice and fresh herbs. Bring this unique twist on any classic meal or appetizer to the table, and everyone will be asking for seconds!

Ingredients:

  • 4 cups frozen cauliflower rice

  • 1/2 cup cucumbers

  • 1/2 cup red tomatoes

  • 3 tbsp cilantro

  • 2 tbsp fresh lemon juice

  • 1 tbsp extra-virgin olive oil

  • 1 tsp pepper

  • 2-3 tbsp hemp seeds (optional)

Directions:

  1. Cook the cauliflower rice as directed on the packaging, then set this aside to cool.

  2. Finely-dice the cucumbers, tomatoes, and mince the cilantro.

  3. In a medium-large bowl, mix all of the prepared ingredients together, along with the lemon juice, evoo, and pepper.

  4. Enjoy!

  5. Store leftovers, if any, in an airtight container in the fridge for up to ten days.
