Best Breakfast Tacos

A hearty, 10-minute breakfast that saves time so you can savor every bite! There’s so much flavor and nourishment packed in with ease. Completely family-friendly and so customizable that this could quite easily become a homey staple!

Ingredients:

  • 1 tbsp avocado oil or ghee

  • 3 tbsp red onions, minced

  • 1 clove garlic, minced

  • 2 pasture-raised eggs

  • 1/2 tsp smoked paprika

  • a few shakes of pink salt + pepper

  • 2 tortillas (these are my favorite!)

  • 1 cup organic spring mix

  • 1/2 avocado, sliced

  • goat cheese, for grating over the top

Directions:

  1. Drizzle the oil or ghee into a skillet and turn the heat up to low-medium,

  2. Once the oil/ghee begins to glisten and get warm, about a minute in, add the onions and garlic. Sauté this for 2-3 minutes, or until the veggies start to turn translucent and are aromatic.

  3. Turn the heat up to medium, if not already done, and crack the eggs into the skillet. Evenly sprinkle each one with paprika, pink salt, and pepper. Allow the egg whites to cook through, then carefully flip them so the other side can cook for about 30 seconds. Flip them back over, then turn the burner off.

  4. Heat the tortillas over an open flame for about 15 seconds on each side (my preference), or however doing so works best in your kitchen.

  5. Plate the warmed tortillas, then evenly spread the spring mix on each. Add the eggs, avocado, and grated goat cheese. Enjoy right away!
