Blueberry Vanilla Protein Pancakes

These pancakes, with pillow-like fluffiness, make it much easier to get out of bed on the weekends! They’re packed with sweet, vanilla protein and bursts of warm, juicy blueberries. You can even replace (half of) the blueberries with chocolate chips for some added versatility and vibrancy— live your life! All I know is they’re perfect for any time of year, and sure to leave you feeling nourished and like your best self after digging in!

Ingredients:

  • 2 eggs

  • 1/3 cup unsweetened (almond) milk

  • 1 tsp vanilla extract

  • 1 scoop vanilla protein powder (this is my favorite!)

  • 1/2 cup almond flour

  • 2 tbsp ground flax seeds (optional for extra fiber)

  • 1/2 tsp (ceylon) cinnamon

  • 1/2 cup organic blueberries

  • coconut oil, for greasing a pan

Directions:

  1. In a small bowl, whisk the eggs. Add in the milk and vanilla then stir.

  2. Mix in the protein powder, flour, ground flax (if using), and cinnamon,

  3. Once everything is stirred up well, fold in the fresh blueberries.

  4. Lightly grease a skillet with coconut oil then turn the stove’s heat onto low-medium.

  5. Scoop about 3 tbsp to 1/4 cup of batter onto the pan at a time. Flip once the batter starts bubbling on the side facing up, then let cook for 1-2 minutes on the other side. Do so until all the batter is used up.

  6. Sprinkle on powdered monk fruit, top with extra blueberries, or even add drizzles of date or maple syrup to seal the deal! Grab a fork and enjoy!
