Honey Sesame Chicken

This one-pan dish has the power to nudge you to head to the kitchen as opposed to grabbing take out! It’s beyond simple and has feel-good factors that will leave everyone at the table feeling fueled and satisfied. This will take 20 minutes, if not less time, to whip up to make our lives easier during busy weeks, or ones when we’re not up for spending an hour doing the prep work. I served this over organic basmati rice and it made for the perfect meal!

Ingredients:

  • 1/4 cup cold water

  • 1 tbsp arrowroot flour/starch

  • 1 tbsp avocado oil

  • 1.5 pounds (about 2) organic chicken breasts

  • 1/2 cup coconut aminos

  • 2 tbsp (manuka) honey

  • Toppings:

  • 3 tbsp scallions, diced

  • 2 tbsp sesame seeds

  • fresh cilantro or parsley, as desired

Directions:

  1. Whisk the water and arrowroot in a small bowl until no clumps remain, then set this aside.

  2. In a medium-large skillet, drizzle on the avocado oil and turn the heat up to low-medium. Use a meat tenderizer to level out the chicken so that it cooks evenly, then cut or slice the chicken into cubes. Transfer the chicken to the heated skillet, and sauté it for 4-6 minutes, or until all the exterior pink is gone.

  3. Whisk the arrowroot mixture once more, then pour it, along with the coconut aminos and honey, over the chicken. Stir everything well, then turn the heat up to medium. Let this simmer and thicken for 3 minutes, then remove the skillet from the heat.

  4. Serve over basmati rice like I did, in a wrap, or whatever you’re feeling and enjoy!
