Pizza Quesadilla

I owe this to my dad who would always make me pizza quesadillas upon request as a kid! They’re the best of two comfort food worlds: a warm slice of pizza and cheesy quesadilla. You can keep this super simple or elevate the inside with tasteful additions like raw honey and minced garlic. The whole family is sure to love this just like mine always has!

Ingredients:

  • 1 tbsp avocado oil

  • 2 tortillas

  • 3 tbsp unsweetened tomato sauce

  • 3 tbsp white onion, sliced

  • 6-8 pepperonis

  • 1/3 cup shredded cheese

Directions:

  1. Grease a skillet or quesadilla maker with the avocado oil. If using a skillet, turn the heat to low-medium.

  2. Lay down one of the tortillas and spread the tomato sauce over the top. Sprinkle on the white onions, pepperonis and cheese. Place the other tortilla on top.

  3. Sear the tortilla on both sides for 4-5 minutes, until golden and the cheese has melted. Slice and enjoy!
