Stuffed Zucchini Boats

A family-friendly meal with hearty veggies doused in lush tomato sauce and covered in golden, grated goat cheese! This dish is so easy to make, and can be added to your list of go-to, 20-minute meals!

Ingredients:

  • 3 zucchinis

  • 2 tbsp avocado oil

  • 2 shallots, minced

  • 1/2 pound organic ground turkey

  • 1/2 tsp pink salt

  • 1/2 tsp pepper

  • 1/2 tsp oregano

  • 1 cup unsweetened marinara sauce

  • 1 cup grated goat cheese (I used the goat’s milk cheddar block from Trader Joe’s!)

  • red chili flakes (optional)

  • fresh basil, for garnish

Directions:

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

  2. Halve each of the zucchinis, then use a spoon to scoop out the flesh of each half. Set these on the pan, then move them to the side.

  3. In a skillet, turn the heat to low-medium, and drizzle on the oil. Let this heat up for 2-3 minutes, then sauté the shallots until they turn translucent.

  4. Add the ground turkey. Once about half the pink is gone, stir in the seasonings, then let cook until the turkey is done.

  5. Pour in the marinara sauce and stir. Scoop the mixture evenly into the divots in the zucchinis. Sprinkle the grated goat cheese over the top.

  6. Let this cook in the oven for 26-28 minutes, then cool for at least 5 minutes before garnishing with red chili flakes and/or fresh basil and enjoying!
