Orange Creamsicle Mocktail

This recipe sent me BACK to a night out with my family in Wilmington, North Carolina at True Blue Butcher and Barrel — they had this orange juice and coconut cream concoction that I knew at first sip I had to recreate. If you also consider creamsicle-flavored desserts as integral parts of your childhood, you get it. This is so refreshing and mentally transports me to an island, no matter where I am. Ingredients:

  • orange and lemon zest for rim, optional

  • 1/2 cup coconut water

  • 1 cup pure orange juice

  • 1/2 cup coconut cream

  • juice of half a lemon

Directions:

  1. Grab your glass of choice and slide a citrus slice around the rim. Roll and press the glass in a small pile of zest until it sticks, as desired.

  2. Add the remaining ingredients to your glass and mix with a straw.

  3. Enjoy right away or after placing in the freezer for at least 10 minutes for an extra refreshing twist!
