Pimento Cheese

This classic dip is irresistibly creamy! Each bite is made up of simple ingredients, including a handful of seasonings and zesty pimentos. My favorite way to enjoy this is to spread it all over a slice of warm toast so that it melts! You can also serve with crunchy crackers or fresh veggies. All I know is it was a staple in my house growing up, and it never lasts long!

Ingredients:

  • 1.5 cups cheddar cheese, grated (I used this!)

  • 1/2 cup white onion, diced

  • 1/2 cup pimentos

  • 1/3 cup mayo (this is my favorite!)

  • 3 tbsp jalapeños, finely diced

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp pepper

  • 1/2 tsp pink salt

Directions:

  1. Grate the cheese you chose and dice the onions. Add these to a medium-sized bowl.

  2. Add in the pimentos, mayo, jalapeños (for some extra spice!), and all of the seasonings. Stir until everything is well-incorporated.

  3. Enjoy with crackers, on warm toast, or with fresh veggies! Store leftovers, if any, in an airtight container for up to 2 weeks.
