Stuffed Avocado Veggie Hash

Savory breakfasts can be a challenge of creativity, but this is here to guide you. Avocados are all the rage nowadays, and their load of omega-3 fats, potassium, and fiber are good reasons for it! Start your day off right with this easy, fun, and fueling breakfast or brunch. Feel free to dress this up or down in anyway, however the veggies and seasonings listed below will not disappoint!

Ingredients:

  • 1 medium or large avocado

  • 1 egg

  • 1 sweet potato, cubed

  • 2 - 3 cups spinach, or any greens

  • 2 tbsp red onion, diced

  • 1 tbsp avocado oil

  • 1 tsp garlic, minced

  • 1/2 tbsp sesame seeds

  • 1/2 tsp each: sea salt, black pepper, paprika, and parsley

  • cilantro, for garnish

Directions:

  1. Preheat oven to 350°F and line a baking sheet, with parchment paper.

  2. Cut avocado in half and the use side unattached to the pit. Crack the egg into the avocado half, where the pit initially lied.

  3. Sprinkle the sesame seeds, feta, salsa or any other favorites on top!

  4. Cook for 8-12 minutes, depending on the consistency that you desire.

  5. While cooking, sauté the sweet potato and veggies in the avocado oil for about 10 minutes and add the seasonings halfway through.

  6. Transfer sautéed mixture to a bowl then place the cooked avocado and egg on top. Grab a fork and enjoy!
