Chocolate PB Covered Apples

This quick snack is for all my readers with a sweet tooth! It swirls the duo of chocolate and peanut butter with the sweetness of juicy apple slices. I found it revolutionary when I first used a straw to core my strawberries, and never imagined it would work for apples, too— groundbreaking in my opinion (see step 1!). This one’s for the kids, study snackers, hard-working adults, and beyond!

Ingredients:

  • I red apple

  • 1/3 cup creamy/crunchy peanut butter*

  • 1/4 cup dark chocolate

  • 1 tsp coconut oil

  • hemp seeds, for garnishing (optional, for extra plant protein!)

  • flakey sea salt

Directions:

  1. Core the apple using a metal or glass straw and pushing it from the bottom up through the top.

  2. Slice the cored apple into medallions. Spread each one with peanut butter.

  3. In 30-second increments in the microwave (stirring between each) or on the stove, melt the dark chocolate and coconut oil together until smooth and glossy. Drizzle the melted chocolate over the apples and sprinkle with hemp seeds, if desired.

  4. Place in the freezer for 10-15 minutes to chill, sprinkle with flakey sea salt, and enjoy!

Notes:

  • Feel free to sub your favorite nut/seed butter!
