Garlic Parmesan Zucchini Coins

Easy, healthy, and family-friendly! These zucchini coins have all you need with the dairy you don’t. They’re lightly crisped on their golden-brown edges and soft in the heart of each medallion. They come together in less than half an hour, making these cute coins the perfect last-minute addition to your meal or game day appetizers selection!

Ingredients:

  • 1 cup zucchini, sliced into medallions

  • 3 tbsp avocado oil

  • 2 tbsp parmesan, freshly grated

    • Swap nutritional yeast, if dairy free is preferred

  • 1 tsp sea salt

  • 1/2 tsp garlic powder

Directions:

  1. Preheat the oven to 450°F.

  2. Add all of the ingredients to a large mixing bowl and toss the zucchinis until they are well-coated in the oil, parm and seasonings.

  3. Spread the zucchinis across a baking sheet, leaving a bit of space between each.

  4. Transfer the pan to the oven. Let roast for about 22 minutes. Flip each medallion halfway through for best results.

  5. Serve immediately and enjoy!

Notes:

  • Bonus: spread a thin layer of parm across the pan before laying the zucchinis on top for an extra cheesy bite! No need to flip the medallions if you do this, too.
