Garlic Parmesan Zucchini Coins
Easy, healthy, and family-friendly! These zucchini coins have all you need with the dairy you don’t. They’re lightly crisped on their golden-brown edges and soft in the heart of each medallion. They come together in less than half an hour, making these cute coins the perfect last-minute addition to your meal or game day appetizers selection!
Ingredients:
1 cup zucchini, sliced into medallions
3 tbsp avocado oil
2 tbsp parmesan, freshly grated
Swap nutritional yeast, if dairy free is preferred
1 tsp sea salt
1/2 tsp garlic powder
Directions:
Preheat the oven to 450°F.
Add all of the ingredients to a large mixing bowl and toss the zucchinis until they are well-coated in the oil, parm and seasonings.
Spread the zucchinis across a baking sheet, leaving a bit of space between each.
Transfer the pan to the oven. Let roast for about 22 minutes. Flip each medallion halfway through for best results.
Serve immediately and enjoy!
Notes:
Bonus: spread a thin layer of parm across the pan before laying the zucchinis on top for an extra cheesy bite! No need to flip the medallions if you do this, too.
