Cool Green Bean Salad

Move over, mayo-laden green bean salads! This one is light and refreshing with a lemony dressing to tie it all together. There’s a subtle hint of spice and a savory garnish of cheese and nutty cashews. A side dish that could be appropriately served alongside meals all year long!

Ingredients:

  • 6 ounces fresh green beans, trimmed

  • 3 tbsp grated manchego cheese

  • 2 tbsp raw cashews

Dressing:

  • juice of half a lemon

  • 2 tbsp evoo

  • 1/2 tsp lemon zest

  • 1/2 tsp sea salt

  • 1/4 tsp black pepper

  • 1/4 tsp red chili flakes

Directions:

  1. Start by making the dressing by whisking all of the ingredients together until silky-smooth.

  2. Toss the green beans in the dressing.

  3. Garnish with the manchego and cashews.

  4. Serve immediately and enjoy! Store leftovers, if any, in an airtight container in the fridge for up to one week for best results.
