Black Bean, Corn, & Feta Dip

Something I’ve always loved about creating my own recipes is twisting that with my passion for health and wellness! I grew up eating my mom’s version of this dip, and gave it my personal, healthy twists. It may seem far too simple to have flavor, but my family, friends, and I all find ourselves filling chips and veggies to maximum capacity only to get a greater taste of it, when served. This is summery, savory, and the best side to bring to a cookout, or to prep for the week!

Ingredients:

  • 2 cans black beans, drained + rinsed

  • 2 cans organic sweet corn, drained

  • 1 cup diced scallions

  • 2/3 cup feta, crumbled (I used this block of feta!)

Vinaigrette:

  • 1/2 cup apple cider vinegar

  • 1/2 cup extra-virgin olive oil

  • 1/2 tsp garlic powder

Directions:

  1. In a large mixing bowl, stir the beans, corn, and scallions together. Stir in the feta.

  2. In a small bowl, vigorously mix the vinaigrette ingredients, then pour it into the large bowl. Stir everything well.

  3. Move this to the fridge to chill and to allow the flavors to soak in for at least 30 minutes before serving.

  4. Enjoy! Store leftovers, if any, in an airtight container in the fridge for up to about 1 week.
