Healthier 7-Layer Dip

This dairy-free dip could not be any easier to toss together! The ten, wholesome ingredients are basically made for one another, including the juicy tomatoes and melted cheese on top. This is perfect for a last-minute game night or any other kind of get-together (which totally includes a chill night in on the couch). Everyone will surely enjoy this healthy version of the classic, charismatic comfort food wrapped up in a warm tortilla or dip with chips!

Ingredients:

  • 1 can black beans

  • 1 cup (dairy-free) sour cream

  • 1 can chickpeas

  • 1 pound organic grass-finished beef

  • 1/2 tsp garlic powder

  • 1/2 tsp oregano

  • 1/2 tsp pink salt

  • 1.5 cups organic hierloom tomato, diced (about 1 medium-sized tomato)

  • 1 cup (dairy-free) cream cheese

  • 2 tbsp hot sauce (optional)

  • 1/4 cup cheese of choice, grated

  • 1/4 cup scallions, for garnish

Directions:

  1. Preheat the oven to 450°F and grab an 8x8 baking dish then set it aside.

  2. In a skillet, cook the beef and once almost all of the pink is gone, stir in the garlic, oregano, and pink salt. Let it sit for one more minute so the flavors of the seasonings can be absorbed.

  3. Spread the black beans out to cover the entire base of the 8x8 dish. Use a fork to lightly mash them.

  4. Next, spread a thin layer of the sour cream out to the edges of the dish, followed by spreading out the chickpeas on the third layer. Add the diced tomatoes next.

  5. If using the hot sauce, mix it with the cream cheese, or go ahead and spread the cream cheese on next as evenly as possible. Finish off with the grated cheese.

  6. Transfer this to the oven and let it cook for 20 minutes. Let it broil for 1-2 minutes for that golden-brown glow on top.

  7. Garnish with scallions, grab some chips/tortillas, and enjoy!

  8. Store leftovers, if any, in an airtight container in the fridge for up to 2 weeks.
