Lemon Basil Guacamole

This creamy dip is a crowd-pleaser that truly, easily comes together in minutes! There are simply a few base ingredients, followed by fresh herbs and spices and zesty lemon juice. Feel free to make this as smooth or as chunky as what feels right to your taste buds. Serve with crackers, chips, veggies, tortillas, a spoon (no judgment here!), and enjoy!

Ingredients:

  • 3-4 ripe avocados

  • 1/2 cup basil

  • 1/4 cup cilantro

  • 1/4 cup extra-virgin olive oil

  • 1 shallot, diced (about 3 tbsp)

  • 3 tbsp fresh lemon juice

  • 1 tbsp cracked pepper

  • 1 tsp minced garlic

  • 1 tsp pink salt

Directions:

  1. In a food processor, toss in the avocados, herbs, evoo, and the diced shallot.

  2. Blend all of this until your desired consistency is reached, whether smooth, chunky, or somewhere in between (my personal favorite!).

  3. Squeeze in the fresh juice, then sprinkle in the remaining spices,

  4. Briefly blend once more, until everything is well-incorporated.

  5. Grab some tortillas, chips, fresh veggies, even just a spoon, and enjoy!

  6. Store leftovers, if any, in an airtight container in the fridge for up to one week.

Notes:

  • I recommend saving at least one of the avocado pits to store with your leftovers. This will keep it fresh and with a sustained vibrancy for much longer than normal! Though, it is okay if your guac does turn slightly brown, this is simply because it is oxidizing naturally! Here, storing with some slices of lemon may help sustain the freshness as well!
