Sundried Tomato Hummus

This smooth, delicious dip is a for sure crowd-pleaser! Between the juicy tomatoes and silky olive oil, this could not be simpler and will save you a trip (or many, if you are like me!) to the store. In addition, the colorful vibrancy matches the flavorful kicks within each savory scoop, or spoonful. Whether served with crispy carrots or crunchy crackers, each bite will make everyone crave another!

Ingredients:

  • 3 cups organic chickpeas

  • 1 cup sundried tomatoes

  • 1/2 cup extra-virgin olive oil

  • 1 lemon’s juice (about 3 tbsp)

  • 1/2 tbsp of each: cilantro, cracked pepper, paprika

  • 1/2 tbsp cayenne pepper (totally optional)

  • 1 tsp of each: cumin, pink salt

Directions:

  1. In a medium-large blender, add in the chickpeas, tomatoes, and evoo.

  2. Blend until smooth.

  3. Squeeze the fresh lemon juice into the mixture, and add all of the spices and seasonings.

  4. Blend until smooth once more.

  5. If desired, transfer to a serving dish, then place extra sundried tomatoes and sprinkles of paprika on top.

  6. Serve with fresh veggie slices, crunchy crackers, or on a crisp slice of toast and enjoy!

  7. Store leftovers, if any, in an airtight container for up to one week.
