Lemon Garlic Hummus

By now, my deep love for hummus must be clearly shown because I can’t stop craving more and more flavors of this addictive dip! This vegan, dairy-free appetizer is a total crowd pleaser, with bold notes of tart lemon and garlic, and subtle hints of cilantro and cracked pepper. This thick, yet smooth, creamy dip has the flavor to amp up any savory plate. Toss on a bed of leafy greens, smear on a crispy slice of toast, crunchy crackers, or even simply spread onto a juicy burger or dip into with fresh, sliced veggies!

Ingredients:

  • 2 cups chickpeas

  • 1/4 cup extra-virgin olive oil

  • 3 tbsp lemon juice

  • 2 tbsp cilantro

  • 1 tbsp cracked pepper

  • 1/2 tbsp lemon zest

  • 1/2 tbsp garlic powder or 1 tsp minced garlic

  • 1 tsp pink salt

  • hot sauce, to taste (optional)

Directions:

  1. In a blender or food processor, blend the chickpeas, evoo, and lemon juice until smooth.

  2. Add in the rest of the ingredients, and blend until everything is well-incorporated.

  3. Enjoy as a topping, dip for fresh veggies, or a simple spread!

  4. Store leftovers, if any, in an airtight container or jar for up to about 10 days.
