Sweet Potato Goat Cheese Guacamole

This creamy dip takes a classic to an new level with a surprising twist — sweet potatoes! It is full of vibrant flavors, and an ultra smooth texture that is irresistibly delicious. Simply mix a few base ingredients, fresh spices, and creamy goat cheese. Perfect for a crowd-pleasing appetizer, simple snack, or addition to the table on a family night in!

Ingredients:

  • 1.5-2 medium, ripe avocados

  • 2 cups sweet potato purée

  • 2 cloves garlic, minced

  • 1/3 cup red onions, finely diced

  • 1 tbsp lemon juice

  • 1 tbsp lime juice

  • 1 tbsp cilantro

  • 1/2 tbsp pepper

  • 1 tsp pink salt

  • 1/2 cup crumbled goat cheese

Directions:

  1. In a medium-large bowl, mash the avocado to your desired consistency, whether smooth or chunky.

  2. Mix in the sweet potato, garlic, red onions.

  3. Stir in the lemon and lime juice, along with the rest of the spices, until everything is well-incorporated.

  4. Fold in the goat cheese.

  5. Enjoy with chips, a salad, toast, or simply as a topping to anything savory!

  6. Store leftovers, if any, in an airtight container in the fridge for up to about ten days. Ideally store the avocado’s pits with the guac so it does not turn brown as quickly, and stays fresher for much longer!
