Avocado Fudge Brownies

Rich and indulgent perfectly describes these gems. They are free of dairy, gluten, and refined-sugar. The avocado sneakily adds not only to the omega-3 fat content, but also to the richness and desire to eat all the batter before it even reaches the oven!

Ingredients:

  • 2 eggs

  • 1 medium avocado

  • 1/2 cup almond butter

  • 1/3 cup coconut sugar

  • 1/4 cup unsweetened milk

  • 1 tsp vanilla extract

  • 4 scoops collagen peptides, optional

  • 2/3 cup almond flour

  • 1/4 cup cacao powder

  • 1/2 tsp baking soda

  • 1/2 tsp sea salt

  • 1/2 cup dark chocolate chips, plus more for topping

Directions:

  1. Preheat the oven to 350°F and line a 9x9 baking dish with parchment paper or spray with avocado/coconut oil.

  2. To a food processor or blender, add the eggs, avocado, almond butter, coconut sugar, milk and vanilla. Blend until smooth

  3. Add the collagen, almond flour, cacao powder, baking soda, and sea salt. Blend until smooth.

  4. Fold in the chocolate chips

  5. Transfer the batter to the prepared dish. Bake for 28-30 minutes, until a toothpick or tip of a knife comes out clean when you stick it in the center.

  6. Let cool for at least 5 minutes then slice, serve and enjoy!

  7. Store leftovers, if any, in the fridge for up to 10 days for best results.
