Peppermint Snowballs

‘Tis the winter season for energy balls made cute aka dipped in white chocolate! These are so easy to make and a delicious sweet treat to pop any time of day. They have a crunchy bit from crushed candy canes and silky coating of chocolate. Especially enjoy around the holidays and all throughout the cozy winter months!

Ingredients:

  • 1 cup almond butter

  • 1 cup almond flour

  • 1/4 cup monk fruit sugar

  • 1/2 tsp vanilla extract

  • 1/4 tsp peppermint extract

  • 2 candy canes, crushed

  • 1.5 bars white chocolate

  • 1 tsp coconut oil

Directions:

  1. Mix all but the last three ingredients together in a mixing bowl. Fold in the crushed candy canes.

  2. Roll the batter into spheres and place on a baking sheet lined with parchment paper.

  3. Place in the freezer for 30 minutes so they can chill. Meanwhile, melt the white chocolate and coconut oil together until smooth and glossy.

  4. Dip and coat each of the chilled spheres in the melted chocolate. Sprinkle with more crushed candy canes, if desired. Freeze for 5 minutes more then enjoy!

Notes:

  • This is my favorite, dairy-free white chocolate.

  • Dampen your hands before rolling the mixture into spheres to prevent sticking, if needed.

  • Store leftovers, if any, in an airtight container in the fridge or freezer.
