Pumpkin Spice Power Balls

Power balls (aka energy balls) are an easy way to up your protein intake and ensure you’re reaching for healthy snacks when the craving for them hits. This fall-inspired edition is no different! With just six ingredients, you can have these no-bake bites at the ready.

Ingredients:

  • 1 cup pumpkin purée

  • 1/4 cup almond butter

  • 1/4 cup tahini

  • 3 tbsp maple syrup

  • 2/3 cup vanilla protein powder

  • 1 heaping tsp pumpkin pie spice (make your own here!)

  • 1/3 cup dark chocolate chips

  • flakey sea salt (optional)

Directions:

  1. In a mixing bowl, stir the pumpkin, almond butter, tahini, and maple syrup together until smooth.

  2. Gradually mix in the protein powder and pumpkin spice. Fold in the chocolate thereafter.

  3. Form the dough into golf ball-sized spheres. Transfer them to a plate or baking sheet lined with parchment paper. Store in the fridge or freezer for about 10 minutes so they can chill.

  4. Sprinkle with flakey sea salt, if desired, and enjoy! Store leftovers in the freezer for up to a few months.

Notes:

  • You can use any nut/seed butter or a combination for this recipe. Just ensure the amount is 1/2 cup total.

  • This recipe yielded 16 power balls for me, but may vary a bit.
