Chocolate-Covered Blueberry Yogurt Clusters

In comes a delicious, no-bake snack! This melts in your mouth and is made for those who crave sweets, but not the sugar crash. These are vegan (if using coconut or another dairy-free yogurt!) and doused in delectable, rich chocolate over a smooth mix of blueberries and creamy yogurt. An awesome pick-me-up no one will be able to get enough of!

Ingredients:

  • 2 cups organic unsweetened yogurt

  • 1 cup organic frozen blueberries

  • 1 cup dark chocolate

  • 1/2 tsp coconut oil

Directions:

  1. Start by mixing the blueberries and yogurt together until the blueberries are all coated well.

  2. On a freezer-safe pan or dish lined with parchment paper, drop dollops of this mixture onto it. Place in the freezer for 25-30 minutes so they can harden.

  3. Meanwhile, melt the chocolate and coconut oil together until silky-smooth. Do so in a saucepan over low heat or in the microwave, stirring every 30 seconds.

  4. Dunk and/or drizzle the yogurt clusters with the melted chocolate.

  5. Return to the freezer for 5-10 more minutes so the chocolate can harden.

  6. Pop them out whenever the craving hits, and enjoy!
