Peanut Butter Banana Breakfast Balls

One of my FAQs sent to my DMs on Instagram is, “Do you have any energy/protein ball recipes?” That I do! It’s clear that we all love them for the taste, no-bake ease, and endless combinations. These also carry the weight of satiating protein, disguised by hearty oats and creamy peanut butter. Sweetened only with a spotty banana and splash of date syrup, they’re also added-sugar-free. Sure to fuel you with nourishment as a snack or dessert to cap off your meal with extra protein to keep full!

Ingredients:

  • 1 ripe banana

  • 1 cup (certified gluten-free) oats

  • 1/2 cup unsweetened, creamy peanut butter

  • 3-4 tbsp date syrup

  • 1/4 cup coconut flour

  • a few dashes of cinnamon

Directions:

  1. Add all of the ingredients to a food processor.

  2. Blend until everything is well-incorporated. The mixture should be very thick.

  3. Dampen your hands to reduce sticking, then roll the mixture into balls.

  4. Enjoy right away or store them in the fridge for 10-15 minutes so they can chill first!

  5. For best results, store them in an airtight container in the fridge for up to two weeks.
