The Best Butterfingers

Move over, candy wrappers, and make way for these iconic Butterfingers 2.0! Every friend and family member who test-tasted these beauties confidently said they were better than the real thing many of us grew up on. To be honest, I was more of a sour candy gal, but there were a few chocolate-based candies that I never traded out on Halloween… I mean, we all had a few of those. These are “The Best Butterfingers” because they not only taste incredible, but are gluten-free and vegan, chock-full of fantastic ingredients. Enjoy these bites of heaven, dare I say, as a protein fix and sweet treat in one!

Ingredients:

  • 2/3 cup dates, pitted*

  • 1 cup unsweetened peanut butter

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1/4 cup peanuts, salted

  • 1 heaping cup cereal**

  • 1 cup chocolate chips

  • 2 tsp coconut oil

  • flakey sea salt (optional)

Directions:

  1. Line a freezer-safe baking sheet with parchment paper, top with a wired cookie sheet (if you have one), then set this aside.

  2. Add the dates, peanut butter, maple syrup, vanilla, and peanuts to the bowl of a food processor. Blend on high until everything is well incorporated. The dough should be very thick.

  3. Pulse in your cereal of choice. Blend on high for about 20-30 seconds, then pulse for 10-20 seconds. This will leave different-sized pieces of cereal behind, adding a more addictive texture to your butterfingers.

  4. Shape the dough into roughly 16 “logs” and place them on the baking/cookie sheet as you go.

  5. Melt the chocolate and coconut oil in a small saucepan over low heat, stirring frequently until glossy. Top with flakey sea salt, if desired.

  6. Place in the freezer to chill for 20-30 minutes then enjoy right away! Drizzle with extra melted chocolate, if desired, as it will freeze immediately.

  7. Store leftovers, if any, in an airtight container in the fridge. Do so for up to 2 weeks for best results, or for up to 3 months in the freezer.

Notes:

  • If your dates are hard, soak in them in hot water for at least 10 minutes so they blend in well.
