Samoa Cookies
My sisters and I grew up as Girl Scouts, and one of our all-time favorite cookies are Caramel Delites, otherwise known as Samoas! Iām convinced they introduced me to my fascination and love for coconut. No oven is needed for these, just some freezer space. My healthy take on these cozy, gluen-free Girl Scout favorites will surly hold you over until the next cookie-selling season!
Ingredients:
2 tbsp coconut, flakes/shreds and unsweetened
2 tbsp coconut flour
1 tbsp almond flour
1 flax egg
1 medjool date, pitted
1/2 cup chocolate. chips or chopped bar
1 tsp coconut oil
Sea salt, for topping (optional)
Directions:
Line a freezer-safe pan with parchment paper
In a blender or food processor, combine the cookies, coconut, and coconut + almond flours (should be a bit crumbly),
Add the flax egg and date, then blend again, until everything is incorporated well and thick.
Roll the dough into 1-2 tbsp-sized balls, and place on the prepared pan, as you go.
Flatten each ball, then create a small hole in the centers.
Transfer to the freezer for 20 minutes, to harden.
In a microwave-safe bowl, melt the chocolate and coconut oil together. Do so in 30-second increments, stirring between each.
Dip the bottom of, then drizzle each hardened cookie, with the melted mixture.
Sprinkle with sea salt, if desired
Store leftovers, if any, in the freezer.
