Roasted Red Pepper Hummus

Hummus is a classic dip so many love! By now, I’m approaching having shared a dozen hummus recipes and somehow hadn’t done a roasted red pepper spin yet. This was beyond easy to whip up with just four base ingredients and three spices to bring it all together. My favorite way to use this is to spread it on crispy toast with mashed avocado, organic turkey slices, goat cheese, microgreens, and a touch of cracked pepper seared at the end for the perfect panini!

Ingredients:

  • 1 can chickpeas, drained + rinsed

  • 1 cup roasted red peppers

  • 1/2 cup extra-virgin olive oil

  • 1/2 cup tahini

  • 1/2 tsp sea salt

  • 1/2 tsp smoked paprika

  • 1/4 tsp black pepper

Directions:

  1. Add all of the ingredients to a high-speed food processor.

  2. Blend until smooth.

  3. Store leftovers in an airtight container in the fridge.
