Sundried Tomato Pasta Sauce

It’s safe to say that most, if not all, of us consider pasta a comfort food (this is my longtime favorite!). This sauce can swiftly make a meal come together. Just combine all of the ingredients, blend, pour over pasta and add some protein, if desired. I recommend making a double batch to have an even quicker-fix prepped for the week! Pro tip: drizzle some olive oil over the leftovers just before enjoying to revive the original flavors and incorporate extra healthy fats!

Ingredients:

  • 1 cup oil-packed sundried tomatoes

  • 1/2 cup coconut cream

  • 2 tbsp fresh cilantro

  • 1 tsp sea salt

  • 1/2 tsp smoked paprika

Directions:

  1. Add all of the ingredients to a food processor or high-speed blender. Blend for about 30 seconds if you want the sauce to be somewhat textured, or continue on if you desire a thinner sauce.

  2. Pour over your pasta of choice and enjoy!

  3. Store leftovers, if any, in an airtight jar or container. Use within a week for best results.
