Brownie Baked Oats

A decadent breakfast-dessert that’s rich and will satisfy the whole family’s sweet tooths. It’s the perfect make-ahead meal or one to have baking as you get ready for the day so you can enjoy every bite before tackling your to-dos. This is gluten-free and vegan, yet doesn’t compromise for taste in the slightest!

Ingredients:

  • 1 cup unsweetened nut milk

  • 1/3 cup coconut sugar

  • 3 tbsp date syrup

  • 1 tbsp vanilla extract

  • 3 cups certified gluten-free oats

  • 1/2 cup raw cacao powder

  • a few dashes of cinnamon

  • 1/4 cup chocolate chips

Directions:

  1. Preheat the oven to 350°F and line a small (brownie) pan with parchment paper.

  2. In a mixing bowl, stir together the wet ingredients: milk, sugar, syrup, and vanilla.

  3. Gradually fold in the oats, cacao powder, and cinnamon until everything is well-incorporated.

  4. Transfer the batter into the prepared pan and top it off by scattering the chocolate chips.

  5. Bake the oats for 18-20 minutes. Remove from the oven and let cool for at least 5 minutes before slicing into squares.

  6. Store leftovers, if any in an airtight container in the fridge for up to a few weeks or in the freezer where they’ll last for months.
