Cookie Dough Stuffed Dates

Another no-bake dessert has hit the blog! They’re so easy to whip up in under 10 minutes and cleanup is minimal. Right up my alley! This salty-sweet treat is vegan, decadent, and so delectable. Kids and adults alike are sure to love this one!

Ingredients:

  • 1/4 cup almond/cashew butter

  • 3 tbsp date/maple syrup

  • 1/2 tbsp vanilla extract

  • a few dashes cinnamon

  • 2 tbsp coconut flour

  • 1/4 cup chopped dark chocolate

  • 16 dates, pitted

  • flakey sea salt

Directions:

  1. In a small bowl, mix the nut butter, syrup, and vanilla together until smooth.

  2. Sprinkle in the cinnamon then fold in the coconut flour. Mix in the chocolate.

  3. Shape the dough into small logs with your hands and stuff the dates until they all have some dough.

  4. Sprinkle with flakey sea salt and enjoy! Store leftovers, if any, in an airtight container in the fridge for up to a week for best results.
