Chocolate Peanut Butter Chia Pudding

Chia pudding is a little something special in my regular rotation. It’s loaded with cleansing fiber and thick enough to hold all of the toppings your heart desires. This chocolate and peanut butter spin is easy to fall in love with at first bite and to whip up in minutes. Prep this single-serve version, or swiftly stock up for the week to have a nourishing breakfast/brunch-dessert-snack at the ready!

Ingredients:

  • 1/4 cup + 2 tbsp chia seeds

  • 1 cup unsweetened nut milk

  • 2 tbsp peanut butter

  • 1/2 tsp cinnamon

  • 1/3 cup dark chocolate

  • 1 tsp coconut oil

  • 2 tbsp salted peanuts

  • flakey sea salt

Directions:

  1. In a small jar, stir the chia seeds, milk, peanut butter, and cinnamon together.

  2. Let the mixture sit for 5-10 minutes to allow it to thicken.

  3. Meanwhile, melt the dark chocolate and coconut oil together over low heat to create a glossy mixture.

  4. Pour the melted chocolate over the thickened chia pudding. Sprinkle on the peanuts and flakey sea salt.

  5. Screw on the lid and store the chia pudding in the fridge for a few hours, or until the chocolate has hardened.

  6. Break the chocolate “magic shell” with a spoon then enjoy!
