Lemon Spice Trail Mix

Finding healthy snacks can be a challenge, therefore we tend to revert back to our old habits. I’ve found that preparing snacks, and meals, in advance is a total game changer! This big batch of flavorful, fiber-packed nuts and seeds will satisfy any crunchy craving. Additionally, a mere handful will hold you over until the next meal. Place these in bowls around the house, and I bet this spicy treat will be gone before the week ends!

Ingredients:

  • 3/8 cup hot sauce

  • 1 lemon, freshly squeezed

  • 1/2 tbsp of each: black pepper, freshly ground, nutritional yeast

  • 1 tsp of each: cayenne pepper, garlic powder

  • 1/2 tsp turmeric

  • 1 tsp sea salt (if not already in hot sauce)

  • 3 cups walnuts

  • 3 cups almonds

  • 1 cup pistachios, shelled

  • 1/4 cup flax seeds (optional)

Directions:

  1. Preheat the oven to 350 degrees, and line a baking sheet with parchment paper.

  2. In a large bowl, combine the hot sauce, lemon juice, and all spices.

  3. Fold in all the nuts and seeds (if using), until everything is coated well.

  4. Transfer the mixture to the prepared baking sheet.

  5. Cook for 10-12 minutes, then let cool for at least five.

  6. Grab a handful, or two, and enjoy!

Notes:

  • Make sure the nuts are unsalted, and have no other add-ins.

  • Use any combination of nuts, as long as it adds up to seven cups total. Same goes for the 1/4 cup of any seeds, if using.
