Banana Overnight Oats
An ultra-easy way to make oats and to simultaneously use your ripening bananas! Enjoy as a sweet start to your day or snack without the added sugars :)
Ingredients:
1/2-1 ripe banana
1/2 cup unsweetened almond/coconut milk
1/2 cup gluten-free oats (these are my favorite!)
1 tsp vanilla extract
1/2 tsp cardamom
1/2 tsp ceylon cinnamon
Directions:
In a small bowl, mash the banana with a fork. Stir in the remaining ingredients.
Store in an airtight container for 3-24 hours in the fridge. Top with fresh fruit, cacao nibs, nut butter, or whatever else you please and enjoy!
