Blueberry Muffin Smoothie Bowl

Each bite of this refreshing, lighter meal and satisfying snack brings out bold tastes of blueberries and an undertone of sweet vanilla. This flavor is surely more commonly known to take on a warm, decadent muffin, but why do we have to stop there?! Now revamped into a vibrant, thick smoothie that can help you take on the summer heat or get extra cozy inside for a chill day in. This is loaded with nutrient-dense goods that are sneakily hidden behind each dessert-like bite, enjoy!

Ingredients:

  • 1-2 cups organic spinach

  • 1/2 cup organic blueberries

  • 1/2 cup unsweetened milk of choice

  • 1 scoop vanilla protein of choice (I used this!)

  • 1/2 an avocado

  • 1-2 tbsp (ground) flax seeds (optional)

  • 1 tbsp almond/cashew butter

  • 1/2 tsp camu camu powder (optional)

  • 1/2 tsp spirulina

  • 3 cups ice

Directions:

  1. Add all of the ingredients, except the ice, into the blender and blend until smooth.

  2. Pour in the ice, then hold the pulse button down for a few seconds at a time. Blend until the ice pieces are smoothed out and to your desired consistency.

  3. Pour the smoothie into your bowl, then add toppings like crunchy cacao nibs, hemp seeds, unsweetened coconut shreds, extra blueberries, and whatever else you’re craving.

  4. Grab a spoon and enjoy!

Notes:

  • I love storing my smoothie bowl or glass in the freezer while I make my smoothie. Once ready and I pour the smoothie inside, it will stay cooler and thick for much longer than normal.
