Mediterranean-Style Omelette

This is so easy to make, yet packed full of flavors! Each bite taste like a garlic + herb with a slight kick combination. All you need are a few, fresh produce items and two pasture-raised eggs. Fun fact: A consistent, Mediterranean diet has been proven to prolong lifespans! This colorful meal can easily be customized to fit anyone’s taste buds. What more could someone want, to get their day off to a good start?!

Ingredients:

  • avocado oil, for cooking

  • 2 tbsp brussels sprouts, shaved

  • 2 tbsp portabella mushrooms, sliced

  • 2 tbsp red onions, diced or sliced

  • 2 tbsp sun-dried tomatoes

  • 1 tbsp kalamata olives, pitted + sliced

  • 1 tsp garlic, minced

  • black pepper, fresh ground

  • oregano

  • cilantro, for garnish

  • 2 eggs, pasture-raised

  • goat cheese, for topping (optional)

  • hot sauce, for topping (optional)

Directions:

  1. Prepare the veggies, by slicing or dicing them, as desired.

  2. Over medium heat, cook the brussels, mushrooms, onions, tomatoes, olives, and garlic until they start to crisp. Add oil, as needed.

  3. Reduce the heat to low.

  4. Sprinkle the pepper and oregano, along with any other spices, and stir well.

  5. Crack the eggs over the pan, so they consume the fruit and veggies and everything is merged.

  6. After 1-2 minutes, flip the omelette, and cook for an additional minute.

  7. Transfer to a plate to add toppings.

  8. Grab a fork and enjoy!

Notes:

  • For scrambled eggs: Immediately after cracking, use a spatula to stab the yolk of the eggs and stir.

  • The fruits and vegetables I listed are items I used, but feel free to get creative in your kitchen!
