Pumpkin Seed Toast

There’s something about a warm slice (or two) of homemade bread, to start the days. Whether sweet, savory, or both, each bite is so fluffy and lightly crumbles into your mouth. It is so simple to make and requires all grain + gluten free ingredients! I recommend smearing with roasted red pepper hummus, mashed avocado + lemon juice, or even turning this into a midday soup (like these) + sandwich meal. Might as well get two loaf pans ready because it won’t be lasting long, especially if you are willing to share!

Ingredients:

  • 2 eggs, pasture-raised

  • 1/2 cup extra virgin olive oil

  • 1 tbsp apple cider vinegar

  • 1 cup almond flour

  • 1/2 cup cassava flour

  • 1 tsp pink salt

  • 1/2 tsp baking soda

  • 1/2 tbsp dried rosemary (optional)

  • 1/4-1/2 cup pumpkin seeds, for topping

Directions:

  1. Preheat the oven to 375 degrees and line an 8x8, glass dish or loaf pan with parchment paper.

  2. In a medium-sized bowl, whisk the eggs, then stir in the EVOO + vinegar.

  3. In a separate bowl, combine the rosemary, if using, almond + cassava flours, pink salt, and baking soda.

  4. Gradually mix the dry into the bowl of the wet-ingredients mixture, until all well-combined.

  5. Pour the batter into your prepared pan. I recommend clipping the sides of the parchment to the dish with clothespins or chip clips. Just be sure to remove the clips, prior to cooking anything, once the batter has made it to the pan.

  6. Cook for 18-20 minutes. About 12-14 minutes in, when the bread is still lightly uncooked on top, sprinkle and lightly press the pumpkin seeds onto the top of the loaf with a spatula.

  7. Place back in the oven, for the remainder of the time, then let cool for at least 5 minutes.

  8. Serve right away, whether plain or with any toppings you are craving, enjoy!

  9. Store leftovers, if any, in an airtight container. If on the counter, it will last about one week and if in the fridge, two to three weeks.

Notes:

  • Feel free to use any (chopped) nuts seeds on top you would like or already have on hand.

  • Be sure to check out my clothespin/chip clip trick on step 5. I do this all the time and it is life-changing!
