Salted Caramel Protein Pancakes
These fluffy, fiber-filled pancakes are such a delicious way to start the day! The four-ingredient, dreamy salted caramel is one I could easily eat by the spoonful. Packed with protein, they make for a great, post-workout meal. Throw in some gooey, dark chocolate chips and you won’t be able to set your fork down!
Ingredients:
1/2 cup paleo pancake mix
1 tbsp ground flax seeds
1 tbsp caramel protein powder (optional)
1/3 cup + 1 tbsp (dairy-free) milk
1/4+ cup chocolate chips (optional, but not really)
1/2 tbsp coconut oil, for greasing the pan
Homemade, Salted Caramel:
1/4 cup creamy nut butter
1 tbsp maple syrup
1/2 tsp cinnamon
1/4 tsp pink salt
Directions:
In a small bowl, stir the caramel protein, if using, pancake mix, and ground flax together.
Gradually add the milk, then fold in the chocolate chips.
Turn a pan onto low-medium heat, then allow the coconut oil to melt and spread on it.
Scoop the batter into your desired-sized pancakes, and allow to cook until the batter begins to bubble on top. After this, flip to the other side for a final minute. I made five, smaller-sized pancakes!
While cooking, simply stir all of the caramel’s ingredients together and you’re all done!
Between each pancake or drizzled on top, spread the homemade, salted caramel on.
Top with crunchy cacao nibs, grab a fork, and enjoy!
