10-Minute Mediterranean Meal
This ultra easy, flavorful meal is perfect for a night in! Just like takeout, but without the additional cost, this is done before you realize. The dollop of fresh, lemon + EVOO hummus paired with crisp tortillas simply can’t be beat! Alongside crisp veggies, this vegan meal hits all the bases and keeps you feeling satisfyingly full and content with each forkful.
Ingredients:
2 (cassava flour) tortillas
1-2 cups organic arugula
1/2 fresh lemon
Lemon + EVOO Hummus:
1/2 cup hummus (I used this!)
1 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice
1/2 tbsp fresh pepper
1 tsp fresh parsley
Veggie Mixture:
1/4 cup brussels sprouts, shaved
1/4 cup cauliflower florets
2 tbsp red onions, thinly sliced
1 clove garlic, finely minced
1 tsp za’atar seasoning
avocado oil, for coating
Directions:
Cut the veggies as listed, or as preferred.
On a small tray (for an air fryer) or pan (for the stovetop), cook the veggies in the avocado oil and za’atar. If not sautéing, cook on 400 degrees for 4 minutes in the air fryer.
Meanwhile, simply mix all of the hummus’ ingredients in a small bowl and set this aside.
To cook the tortillas and get those slightly-charred areas, heat over an open flame for about ten seconds on each side. Super easy and my go-to way to cook them! This is going to be the “pita bread" on your plate.
Add the arugula, hummus mixture, "pita bread,” and cooked veggies to the plate, once everything is cooked.
Add some lemon wedges and fresh avocado, then enjoy!
Store leftovers, if any, in an airtight container in the fridge for up to one week.
Notes:
If the plate is all mixed with the lemon juice and/or hummus, the food will not last as long and will become damp within the next few hours. Just a fair warning to keep things separate, if you plan to store it for later!
