Basil Tomato Soup & Toasty Grilled Cheese

This take on a soup & sandwich combo is packed with flavor whole families are bound to love. Between the juicy tomatoes, fresh basil, and melted cheese, it’s all here! Lean into this 20-minute meal in the cooler months, or whenever your craving for comfort food hits!
Ingredients:
Tomato Soup:
2 tbsp avocado oil
3 cloves garlic, minced
1/2 cup red onion, diced
1 cup mushrooms, diced
1 tsp cracked black pepper
1/2 tsp cumin
1/2 tsp oregano
1 28-ounce can or 3.5 cups organic crushed tomatoes
1 tsp pink salt
basil, for garnish
Grilled Cheese:
Directions:
Starting with the soup, grab a medium-large saucepan and drizzle in the avocado oil. Turn the heat up to low-medium so the pan and oil can heat up for a few minutes.
Add the garlic, onions, and mushrooms to sauté for 3-4 minutes.
Sprinkle in the pepper, oregano, and cumin. Pour in the tomatoes, stir, and bring it all to a low boil. Add the salt, then let the soup simmer for 5-10 minutes while you make the grilled cheese.
Spread your slices of bread with ghee and mayo, then add mozzarella to your heart’s content. Use a panini press, grill, or standard greased skillet to heat the sandwich and toast both sides.*
Serve the soup, topped with fresh basil, and enjoy alongside the grilled cheese! I love dipping the sandwich into the soup for an extra cozy feel!
Notes:
For an extra golden-brown finish and crunchy exterior, toast the bread then carry on with step 5.
