Cheesy Turkey Cauliflower Rice Skillet

Introducing a one-pan meal that is sure to carry us through the colder months in particular! This skillet dish is so cozy and drew my housemates into our kitchen to compliment the smells. The aromatic onion and garlic scents mix so well with the melty cheese and help sneak in extra nutrients from the cauliflower rice. This reheats so well and is something the whole family can love, if you are willing to share!

Ingredients:

  • 1 pound ground turkey*

  • 1.5 cup mushrooms, sliced

  • 3/4 cup white onion, diced

  • 1 cup frozen cauliflower rice

  • 2 tbsp tomato paste

  • 1 tsp garlic powder

  • 1 tsp sea salt

  • 1 cup bone broth, any flavor

  • 2 cups shredded cheese of choice

  • 2 tbsp arrowroot starch

  • 2 tbsp fresh cilantro

  • 1 tbsp chives

Directions:

  1. Add the turkey to a medium-large skillet. Toss in the mushrooms and onion once the meat is about half pink and half cooked. Sauté until the meat is fully cooked through, for about 5 minutes.

  2. Mix in all but the cilantro and chives of the remaining ingredients. Reduce the heat to low, cover the skillet and let cook and thicken for the next 20 minutes.

  3. Garnish with chopped cilantro and chives.

  4. Scoop into serving bowls and enjoy!

Notes:

  • I have tested this with ground beef and the final product was just slightly less thick— feel free to make this swap, it is still delicious!
