Crockpot White Chicken Chili

The kitchen appliance I always say I should use more often is my crockpot! They make every meal so effortless and have the added bonus of making the kitchen smell amazing for hours on end. I’ve finally, dare I say, mastered this iconic chili recipe and am so excited for you to bring it to your own homes. Full of tender protein, aromatic veggies, and creamy greek yogurt, this has everything you need and nothing you don’t!

Ingredients:

  • 1.5 pounds organic chicken

  • 2 15oz cans white beans, drained and rinsed

  • 2 4oz cans green chiles

  • 1 cup white onion, diced

  • 3 cloves garlic, minced

  • 1 tsp sea salt

  • 1 tsp cumin

  • 2 cups chicken bone broth

  • 1 cup greek yogurt or sour cream

  • juice of one lime

  • garnishes: fresh cilantro, jalapeños, red chili flakes

Directions:

  1. Add everything, except for the greek yogurt, lime and garnishes, to a crockpot.

  2. Set the crockpot to the soup setting on high, or just the standard high setting, for 2 hours.

  3. Once cooked, pull the chicken out and shred it off to the side with two forks. This should fall apart with ease.

  4. Return the chicken to the crockpot and add the yogurt/sour cream and lime juice. Cook on low for a final 30 minutes.

  5. Scoop into serving bowls, garnish as desired and enjoy! Store cooled leftovers, if any, in an airtight container in the fridge for up to 10 days for best results.
