Herby, Grilled Fall Skewers

Cool, sunny weather calls for as much time outside as possible. This includes brining the kitchen out there, sort of. These tasty skewers are both sweet and savory, with ultra vibrant colors. They have everything, from crisp apple cubes to salted sweet potatoes. Bring a tray of these to your next cookout or potluck, and I have no doubt that people will ask where you bought them from!

Ingredients:

  • 2 cups sweet potatoes, cubed

  • 3/4 cup apples, cubed (about 1 large or 2 small)

  • 1/2 cup brussels sprouts, sliced fairly thin (about 3-4 sections)

  • 1/2 cup carrot chips

  • 1/2 cup red onions, sliced into chunks

  • avocado oil, for drizzling or spraying

  • 1/2 tbsp organic, dried cilantro

  • 1/2 tbsp garlic powder

  • pink salt, to taste

Directions:

  1. Use a large chef’s knife and cutting board to prepare the sweet potatoes, apples, brussels, carrots, and onions as listed.

  2. Skew them on however you like! This could be do everything twice, then repeating. There is no definitive structure to it, but you can use the image for reference.

  3. Once the skewers are as full as you’d like, spray or drizzle both sides with avocado oil.

  4. Sprinkle both sides with the three seasonings.

  5. Cook on the grill at about 400 degrees, for 10 minutes. Be sure to flip halfway!

  6. Enjoy on top of a salad, with a side of grass-fed + finished steak, or with a side of my Whole30 ranch!

Ingredients:

  • Although I do find these ingredients to go wonderfully together, feel free to add or swap whatever you chose! This could be cubes of chicken, broccoli or cauliflower florets — all up to you, but the timing may be slightly different.
