Juicy Jackfruit Burgers with Avocado Slaw
Tired of the normal burgers, eaten often? Good news: these will easily add a colorful twist to your plate! They’re sweet and spicy, with a quick and creamy avocado slaw alongside it. An ideal dish you can serve to friends and family, without any hassle. Devour on your favorite, soft bun, a lettuce wrap, or sweet potato buns (see here for a how-to)!
Ingredients:
Mildly Spicy Jackfruit:
1.5 cups jackfruit, sliced or shredded
1/2 tbsp black pepper, freshly ground
1 tsp of each: cumin, onion powder, paprika
1/2 tsp turmeric
Avocado Slaw:
2 small avocados, ripe
1/4 cup red cabbage, shredded
2 tbsp carrots, shredded
2 tbsp scallions, diced
1/2 lime’s juice, fresh
1/2 tbsp black pepper, freshly ground
2 tbsp hot sauce (optional)
Directions:
Over low-medium heat, sauté the jackfruit pieces until starting to turn golden-brown on the outsides.
While cooking, use a fork to smash the avocados in a small bowl. Stir in all other slaw ingredients, and set aside.
Sprinkle all spices onto the jackfruit and stir well.
Let cook for an additional 2-3 minutes, stirring occasionally.
Spread the slaw onto your bun or wrap of choice, if using. Add the jackfruit on top.
Enjoy!
Store leftovers in the fridge, if any.
Notes:
If storing leftover slaw, keep the avocado’s pit with it, to keep it from going bad as soon.
