Lemon Butter Turkey Sandwiches

These hearty sandwiches get better + better, as the crisp-edged bread slices taste more + more lemony, with each bite! They truly take under 30 minutes to throw together, and could even be a fun, family meal to make to take on the beach, to a picnic, or simply to meal prep for the week ahead. With just seven ingredients, which are mostly customizable, no one will be able to resist these simple sandwiches. Between the gooey cheese of your choice (hello, goat cheese!) and sprinkles of poppy seeds, this takes classic comfort foods to a whole new level!

Ingredients:

  • 10 slices of bread (I sliced up this!)

  • 3 tbsp ghee (this is a staple of mine!)

  • 2 tbsp fresh lemon juice

  • 1/2 tbsp poppy seeds

  • 1/4 cup goat cheese

  • 10-15 slices of organic turkey

  • 1/2 cup organic, leafy greens

Directions:

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper, or lightly grease one with avocado oil.

  2. In a microwave-safe bowl, melt the ghee for just 30 seconds in the microwave, or over the stovetop and in a saucepan.

  3. Stir in the lemon juice and poppy seeds.

  4. If not already done, slice your bread into ten slices.

  5. Lightly and as flatly as possible, press each side of each slice into the lemon butter mixture, and let the excess liquid drip off, back into the bowl. Transfer to the prepared pan as you go.

  6. Once all the slices are soaked and the mixture is completely used, cook these in the oven for just 6 minutes, or until your desired crispness is reached.

  7. Immediately added the (goat) cheese to half of the slices, followed by the turkey slices. Add the organic greens as well.

  8. Place each slice without toppings on top of one with them to form the sandwiches.

  9. Enjoy!

  10. Store leftovers, if any, in an airtight container in the fridge for up to one week. Feel free to eat warmed or right out of the fridge!

Notes:

  • You can also use organic chicken, instead of turkey, or whatever meat you’re craving!
