Pineapple Boats
The juicy flavor of pineapple pairs wonderfully well with rice, shrimp, chicken, onions, and even brussels sprouts. Add some spice, and you’re as golden as this pineapple, if you ask me. Not feeling the heat? No worries, this is completely customizable, to fit your taste buds. It’s bound to sweeten any average, summertime dish, straight from home!
Ingredients:
1 pineapple, ripe, halved, and pitted
1 medium sweet potato, diced
1 cup of my Bold Buffalo Cauliflower Wings
1/2 cup brussels sprouts, preferably shaved thin
1/2 red onion, small
Directions:
Slice the pineapple in half, then remove the insides, and save for later.
Prepare sweet potatoes, cauliflower wings, brussels, red onion, or any fillings you desire.
Using cooked fillings, split and pile them into each pineapple half.
If desired, top with avocado, lemon or lime juice, hot sauce, or extra seasonings.

This recipe is can be completely made into your own. All ingredients, except the pineapple are simply some I highly recommend incorporating!
