Berry Chocolate Yogurt Bark
Having a sweet-snack on hand is a must for me, every single day! This one is ideal to have on hand, even if it’s only for a few of them. The ingredients are easily customizable as well, from drizzles of creamy nut butter to clusters of crunchy granola. Plus, all you need is a freezer-safe pan + a little patience for it to harden (the hardest part for me)!
Directions:
If desired, mix the yogurt and maple syrup together, in a small bowl. If omitting the maple syrup, skip straight to step two!
Pour the yogurt onto a freezer-safe pan, then spread it about 1/2-inch thick.
Slice up the berries, then disperse them onto the layer of yogurt as evenly as possible.
Sprinkle on the cacao nibs, ground flax, and cinnamon.
Place in the freezer, to harden, for 45-50 minutes.
Melt the chocolate + oil, in the 30-second increments, stirring between each. It only took me two rounds!
Using a small spoon, drizzle the melted chocolate onto the hardened bark. Place back in the freezer for up to 5 minutes.
Remove from the freezer, then use your hands to break the slab of bark into pieces.
Enjoy!
Store leftovers, if any, in an airtight container in the freezer for up to about a month. Although, best of luck with making it last that long!
Notes:
This is totally customizable, especially the toppings. You can add or sub creamy nut butters, crushed nuts, unsweetened coconut flakes, the options are endless!
I recommend using the maple syrup, particularly if your yogurt is unsweetened — it makes all the difference!
