Cinnamon Apple Crisp

This one-skillet sweet treat is comforting and something I can easily indulge in all year long. Perfect for any friends and family members, who have any sort of sweet tooth! Like all of my other dessert recipes, this contains zero refined sugars, grains, gluten, and dairy. There is an option to create a nutty crumble from scratch, from my paleo peach cobbler skillet, which will develop a golden-brown glow. Underneath is a hidden, thick layer of juicy apples and a fresh + stronger aroma of cinnamon. With a scoop (or two) of cool, vanilla ice cream or coconut whip on top, this doesn’t stand a chance of being a leftover!

Ingredients:

Filling:

  • 5-6 apples, sliced (3.5 cups)

  • 1/2 lemon’s juice, fresh

  • 2 tbsp honey

  • 2 tbsp tapioca flour/starch

  • 1 tsp vanilla

  • 1/2 tsp allspice

  • 1/2 tsp cinnamon

Crumble:

Directions:

  1. Preheat the oven to 375 degrees and lightly grease a cast-iron skillet, with coconut oil.

  2. Combine all the filling’s ingredients, and mix well.

  3. Stir in the sliced apples, until the filling has covered all the slices well.

  4. Transfer to the prepared skillet.

  5. Create the crumble in one of two ways:

    • (the cookie route) Crumble the cookies in whatever way is preferable Sprinkle over and spread evenly on the filling.

  • (homemade) In a food processor or blender, lightly pulse the walnuts, so they are chopped. Can also do this by hand, but this is much faster. Transfer walnuts to a small bowl, then stir in the almond + arrowroot flours, allspice, and cinnamon. Gradually add the coconut sugar and melted coconut oil, then stir again. Once no clumps appear in the mixture, pour it on top of the apple filling,

6. Bake for 30-32 minutes. Broil for an additional 1-2 minutes, for an extra golden-brown look.

7. Grab a spoon and serve with ice cream, coconut whip, or eat on it’s own!

8. Store leftovers, if any, in the fridge.

Notes:

  • I used an 8-inch cast-iron skillet, but you can easily use an 8x8 baking dish instead. Doubling the recipe and using a larger skillet or dish is also totally welcome here!

  • Can substitute pecans for walnuts, if using the homemade crumble recipe.

  • Don’t have allspice, don’t worry: use all cinnamon (1 tsp total), for each part, or vice versa.
