Cinnamon Roll Bliss Balls

Raise your hand if you also grew up devouring Pillsbury cinnamon rolls🙋🏼‍♀️ They were irresistibly served on repeat in my house! This no-bake twist on so many’s favorite treat to start the day with is so delicious. I left the gluten, dairy, and inflammatory oils behind and focused on crafting these with lots of protein, healthy fats, and not-too-sweetness. These make for the perfect, pre-workout snacks, post-dinner desserts, or simply serve as pick-me-ups when you want to something sweet but satisfying!

Ingredients:

  • 1 cup oats

  • 1 cup cinnamon roll almond butter (or sub cashew!)*

  • 1/2 cup almond butter

  • 1 scoop vanilla protein powder

  • 1 tbsp maple syrup

  • 1/2 tsp cinnamon (add an extra 1 tsp if opting for cashew butter above)

  • 1/2 tsp pink salt

Icing (optional):

  • 1/2 bar of white chocolate

  • 1 tsp coconut oil

Directions:

  1. In a food processor, add your oats and blend on high until they begin to develop a flour-like consistency. If there are still bits of oats in the mix— that’s totally fine and will provide a great texture that still works here!

  2. Add the nut butters, vanilla protein, maple syrup, cinnamon, and pink salt to your food processor. Blend until everything is mixed well.

  3. Grab a freezer-safe dish or pan and line it with parchment paper. Use your hands to press the mix together and roll it into balls. I made about 20 out of one batch!

  4. Move these to the freezer to chill for 10-15 minutes. Meanwhile, if using, melt the white chocolate and coconut oil together incrementally in the microwave or over the stovetop, making sure to be stirring frequently.

  5. Once the balls have chilled, douse and/or drizzle them in the icing. Place them back in the freezer for a final 5 minutes. Here, double-dipping/drizzling is highly encouraged (the icing will now freeze almost immediately)!

  6. Enjoy right away! Store leftovers, if any, in an airtight container in the freezer for up to about one month.
