Crunchy Protein Power Balls

Many of us are striving to eat more protein, myself included. I know it’s not always easy, especially at the start. I also know that a snack is frequently essential to hit our intake goals. In roll these beauties with loads of varied textures and fiber and protein sources. Think: crunchy peanut butter chocolate chunk balls but with nourishing superfoods!

Ingredients:

  • 1 cup crunchy peanut butter, unsweetened

  • 3 tbsp raw honey

  • 1 tbsp coconut oil, melted

  • 1 cup vanilla protein powder (I used this!)

  • 1/3 cup oats

  • 2-3 tbsp chia seeds

  • 1/2 tsp cinnamon

  • 1/2 cup chopped dark chocolate

Directions:

  1. In a small bowl, mix the peanut butter, honey, and coconut oil together.

  2. Fold in the protein powder then the oats, chia seeds, and cinnamon. Add the chocolate at the end.

  3. Roll the batter into about one dozen balls. Store in the fridge for at least 10 minutes for them to firm up.

  4. Enjoy! Save leftovers in the fridge in an airtight container.
