Espresso Energy Balls
These no-bake bites are the kind of snack for the true coffee lovers out there! They are perfectly bitter sweet with a dreamy, chocolate drizzle and, of course, flakey sea salt on top of it all. The bold coffee inside these four-ingredient, ten-minute treats tie together with dates to make an ideal, energizing duo! Whether you are grabbing on your way out the door or as pre-workout fuel, they will be gone well before you know it!
Ingredients:
6 medjool dates
1/2 cup walnuts
1/3 cup almond butter
1-3 tbsp instant coffee (I used Four Sigmatic’s— my favorite!)
Optional (but not really) Toppings:
1/4 cup dark chocolate chips
1/2 tsp coconut butter or oil
flakey sea salt, for sprinkling on top
Directions:
Slice a small slit into each date to remove the pit, then soak them in hot water for about 5 minutes, or until they are softened.
In a food processor, blend the softened dates, walnuts, almond butter, and coffee together until a large ball has accumulated and starts spinning inside. You may need to scrape the sides down once or twice between blends, to ensure everything combines well.
Dampen your hands and roll the mixture into balls, sizing them however you chose!
Either enjoy right away or make the chocolate drizzle: Simply melt the chocolate and coconut butter/oil in 30-second increments in the microwave. Stir between each until a silky-smooth consistency is reached.
Drizzle the chocolate onto the date balls or give them a bath in it, then sprinkle with flakey sea salt! I recommend doing so on a baking sheet lined with parchment paper or a nonstick pan.
Place in the fridge for about five minutes, then enjoy!
Store leftovers, if any, in an airtight container in the fridge.
