Graham Cracker Bites
These delectable bites are family-approved and are guaranteed to be gone too quick! Like all of my recipes, you can ditch the gluten and refined-sugar to make these. They’re also completely vegan and introduce a sense of nostalgia for those who loved all things s’mores growing up. I love having treats like this on hand for when the dessert and chocolate cravings hit so I can know I’m also fueling my body with wholesome ingredients without comprising for taste!
Directions:
In a mixing bowl, stir the nut butter, coconut sugar, and vanilla extract together well. The mixture should be relatively thick.
Add the crushed graham crackers, stir well, then mix in the collagen peptides.
Roll the batter into balls (I made about 16) and place them on a freezer-safe pan. I recommend placing down a sheet of parchment paper, too.
Let these chill in the freezer for about 20 minutes. Meanwhile, melt the chocolate with the coconut oil either in the microwave in 30-second increments or over low heat on the stove. Be sure to stir frequently so the chocolate does not burn.
Once the balls are done chilling, dunk them in melted chocolate with a fork, spoon, or small spatula. Sprinkle with extra crushed graham crackers, if desired. Repeat until all the balls have been covered in chocolate.
Let freeze for a final 5-10 minutes then enjoy right away!
Store leftovers, if any, in an airtight container in the freezer and let thaw for about 5 minutes before enjoying for best results.

These are my favorite gluten-free graham crackers that I used for this recipe!
I used 1/4 cup dark chocolate and 1/4 cup white chocolate and melted each with about 1/2 tsp of coconut oil separately.
